Gluten Free Cookie Recipe

Ingredients

Yields: 16 

  • 1 cup almond flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a medium bowl, mix together the almond flour, salt, and baking soda.
  3. In a separate bowl, whisk together the coconut oil, honey, egg, and vanilla extract.
  4. Then add the wet part to the dry ingredients and mix until well.
  5. Stir in the chocolate chips.
  6. Drop spoonfuls of the cookie dough onto a lined baking sheet.
  7. Bake for 9-10 minutes, or until the edges are golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. This is a gluten free ameretti cookie recipe.
